The Jerusalem artichoke has a thin skin that does not need to be removed. It can be eaten raw, for example in salads. The taste of the tuber is slightly sweet, nutty and reminiscent of artichoke. The white or pink tubers quickly turn brown when exposed to the air. The Jerusalem artichoke can also be boiled and eaten as is. The cooking time varies from 10 minutes for small Jerusalem artichokes to 30 minutes for larger ones. In addition, after cooking, they can be fried, similar to potatoes, with or without the addition of herbs, garlic, and so on.
